I Got The Beets, I Got The Beets, I Got The Beets… Smoothies

Soooooo variety is the spice of life, right?  Speaking of variety, beets are terrible.  But hey a diverse diet is a healthy diet so it’s important to try new things.  I mean I used to live off of cheeseburgers and soda… you can check out my earlier blog posts to see where that got me!

Lately I’ve kind of fallen into a smoothie rut.  I have a few that I really like and so I’ve been drinking those almost exclusively.  So in the spirit of the new year and for the sake of variety I decided that it was time to crawl out of my smoothie comfort zone… with beets.  Why beets?

1. Because they provide ample opportunity for puns taking my lame dad jokes to a new level.

And  B (for B-eets)  Because they are colorful so they are probably delicious, right?

Well, they are great for tons of puns and are most definitely colorful, the taste on the other hand is… well earthy.  “Earthy” is a polite way of saying that it kind of tastes like dirt.  But it could be worse, I mean you could actually eat dirt and not get the benefit of drinking a beet.  So on that note here are two beet smoothie recipes that I made… and consumed… and it wasn’t the worst thing in the world.  Just kind of earthy.

Blueberry Beet Smoothie

  • Servings: 1
  • Difficulty: easy

So you want to drink a beet?

Ingredients

  • 1 chopped raw red beet root (the red part :))
  • 1 cup chopped raw celery
  • ½ cup frozen blueberries cup
  • 2 cups unsweetened vanilla almond milk

 

Directions

    1. Wash/rinse all ingredients.
    2. In a smoothie blender drop da beet, celery and frozen blueberries. Add almond milk to fill line.
    3. Blend together and enjoy.

Banana Beet Smoothie

  • Servings: 1
  • Difficulty: easy

Ingredients

  • 1 chopped raw red beet root (the red part J)
  • 1 cup chopped raw celery
  • 1 medium banana
  • ½ cup coconut water

 

Directions

    1. Wash/rinse all ingredients.
    2. In a smoothie blender drop da beet, celery and banana. Add almond coconut water then top off to fill line with regular water.
    3. Blend together and “enjoy” (I’m actually making the air quote motion in my head).
