Blueberry Avocado Smoothie

So I’ve seen recipes for it, I have thought about it but I’ve never tried it.  I really like avocados: whole, smashed, sliced, diced… pretty much any way that I’ve ever tried an avocado I’ve liked it.  They taste great and are packed with potassium, vitamins and healthy fats.

But in a smoothie?  Like to drink?  It just never sounded very appetizing.  Lucky for me 2017 is the year of getting out of my smoothie rut so today I blended one up… and it was actually pretty dang good.  For the base I loaded it up with a fair amount of kale, my go-to super food, and some carrots.  I added frozen blueberries to sweeten it up and then finished it off with 1/2 of an avocado.  I used unsweetened vanilla almond milk for the liquid, but water would work fine too.  The avocado and frozen blueberries really gave it a nice, thick and creamy texture.  For the real test I passed it around to the peeps that were home for an official taste test.  The results were mixed; wifey liked it but our picky 11 year old was not impressed… you can’t win them all.  But overall this was a keeper and there will definitely be more blended avocados in my future.

Blueberry Avocado Smoothie

Blended avocado? It is better than it sounds!

  • 2 cups chopped fresh kale
  • 2 cups unsweetened vanilla almond milk
  • 1 cup frozen blueberries
  • ½ medium avocado
  • ½ cup of chopped fresh carrots


  1. Wash/rinse the kale and carrots ingredients.
  2. In a smoothie blender add kale, carrots, frozen blueberries and avocado.  Add almond milk to fill line.
  3. Blend together and enjoy.
